The Vinoy Resort and Golf Club, Autograph Collection has announced the opening of a new restaurant in St Petersburg, Florida, US.

Known as Parasol, the restaurant is a full-service Latin American outlet situated alongside the resort’s main pool area.

The outdoor restaurant, which offers a view of Tampa Bay, was developed as part of the renovation of the resort.

Featuring an atmosphere inspired by the island, the restaurant has a menu that offers fresh seafood, different flavours and spices as well as tropical craft cocktails.

Parasol serves various bold dishes with Latin American flavour in addition to lighter dishes, including salads, bowls and “botanas”, for poolside dining.

Its lighter dishes also include Mexican small plates comprising lobster quesadillas and grouper ceviche with leche de tigre, a citrusy Peruvian marinade.

The restaurant’s larger plates include Latin-inspired burgers, Cubano sandwiches and cochinita pibil tacos. Side dishes served by the al fresco restaurant are similar to Mexican street food.

Parasol’s dessert menu includes Latin American options such as tres leches, coconut flan and abuelita chocolate cake.

Furthermore, the restaurant’s cocktails menu features Chilcano, which is a mix of pisco, ginger, strawberry and lime, among others.
