An LFC-200 biodigester has been installed at the Hilton Dubai Palm Jumeriah by waste management company Power Knot.
Commissioned on 1 June 2023, the aerobic digester uses micro-organisms to break down up to 360k of food waste per day.
The machine was installed in the resort’s garbage room where food waste from its 12 on-premises restaurants is disposed of. So far more than 20,000 kg of food waste has been diverted from landfill.
After conducting evaluations of waste management alternatives including dehydrators, composters, and other biodigesters, the resort's sustainability team headed by executive chef Steven Smalley concluded that the LFC biodigester was the right solution.
The decision was guided by factors including the machine's low operating costs, advanced data analytics including carbon footprint reporting and fault reporting capabilities.
The Hilton Dubai Jumeriah is working towards reducing its ecological footprint, aligning with the policies of the United Arab Emirates and global sustainability goals to reduce business carbon emissions and the sending of food waste to landfill.
Increasing consumer awareness of food wastage is putting pressure on the travel and tourism sector to place greater importance on this unsustainable by-product of travel and tourism.
Hilton has pledged to reduce food waste by 50% across its global operations by 2030.
