Marriott hotels in Costa Rica cut food waste with Leanpath

The Leanpath process identifies root causes of food waste and changes the behaviours that drive them.

Two Marriott hotels in Costa Rica, the Marriott Hacienda Belen and the Los Suenos Marriott Resort, have successfully reduced their food waste by 25% within months of implementing the Leanpath food waste prevention platform.

This significant achievement aligns with Marriott International's Serve 360 corporate-wide sustainability goal of halving food waste by 2025.

Leanpath, a Certified B-Corp [a designation indicating that a business meets high standards of verified performance, accountability and transparency on specific factors], is dedicated to making food waste prevention and measurement an everyday practice in kitchens worldwide. With customers in more than 45 countries, Leanpath's solution identifies the root causes of food waste and changes behaviours that lead to that waste.

Leanpath's food waste tracking devices drive success

Leanpath's food waste-tracking devices have been instrumental in this success. The devices allow high-production food and beverage operators to understand what food is being wasted and why.

Leanpath's analytics platform identifies high-impact opportunities for food waste reduction and sets automated goals to break a large food waste problem into manageable wins. Most kitchens cut their food waste in half with Leanpath within a year, leading to significant financial and environmental savings.

Recognition and impact

Jose Venegas, food and beverage cost supervisor for the two hotels, emphasised the importance of sustainability and efficiency in managing food budgets and stated: "Preventing food waste reduces our impact on the planet and also makes us more efficient with our food budgets."

He noted that Leanpath data is invaluable in guiding efforts to reduce food waste and in fostering a culture of waste control in the kitchen.

"It helps us understand where to focus our efforts in reducing food waste and keeps the team more conscious about controlling waste as a part of the kitchen culture."

The efforts of Venegas and his team have been recognised by Marriott International, which launched the Food Waste Reduction Rally in April 2023 to encourage sites to share their food waste data and best practices. The Costa Rica Marriott Hacienda Belen was recognised as the leader in food waste reduction for the Caribbean and Latin America region.
